Peach Cobbler

This little gem was a request from my Father for Fathers day.

I perused the internet for a delightful recipe and found this one!

My mother had some peaches on hand, so I peeled them, melted some butter in a 8×8 dish and the dish began.

Things you will need:

For batter:
1 cup flour
1 cup sugar
1/4 cup of butter
1 tbspn of baking powde1 cup of milk – I used whole (thinking of my father on that one)
A wee pinch of salt

For peach filling:
4-5 medium/large ripe peaches, peeled or unpeeled, whatever your preference. Allow for there to be some of the peach juice.
1 tpsn lemon juice
1/2 cup sugar
1/2 tspn corn starch (personal addition for a thicker peach goo)

Additional choice:
Cinnamon 1-4 tspns

I used a ceramic baking dish, so I melted my 1/4c butter in the dish in the microwave. If you are using a metal pan of any sort…DO NOT microwave. 🙂

Mix flour, milk, baking powder and salt in a bowl. Pour over the top of the melted butter, do not stir the butter and batter, just let them combine naturally.

Get yourself a nice little stovetop pot, and put the peaches, sugar and lemon juice in there. Turn the burner onto med-high/high and DO NOT leave their sight, stir stir stir until this boils, things may get a bit crazy in there, that is ok. When the boiling is surely happening, add the corn starch and remove, stir for a few more seconds to combine it well. Then, pour over the top of the batter in the dish and again, leave it alone! Don’t stir! Sprinkle desired amount of cinnamon. I let my mom put the cinnamon on and she usually goes for the 4tspn route, I would probably be the 2 tspn person, but it was a delight either way.

Top with whipped cream or ice cream and enjoy!

Homemade whipped cream:
1 cup whipping cream
1/4-1/2 (depending on desired sweetness)
Optional vanilla 1/4 tspn-1tpsn

Pour all of these in a bowl and get out your hand mixer (you can whisk, but you will want a partner for that) and beat it until the mixture forms a nice little peak on your beater!

Devour!
